Cashew and Bitter Gourd Curry (Kaju Karela ki Sabji)

1 Bitter Gourd

5-6 Cashew

1 Tablespoon Jaggery

2 Dry Red Chillies

1 Small Tablespoon Mustard Seeds

1 Tablespoon Turmeric

1 Tablespoon Red Chilli Powder

Edible Oil

1 Small Tablespoon Asafoetida

Method

Place oil in a pot to cook. When it get cooked enough, add ½ tablespoon asafoetida, dry red chillies, now, bitter gourd followed by water.

Close the lid and leave it to cook for 5-10 minutes. Now, add ½ glass of water again, then add jaggery, turmeric powder, coriander powder, red chilli powder and salt.

Mix it properly and add cashew. Cook for next 5 minutes.

Serve with what suits you both.

Serves – 1-2 persons
