Kahjur paak or dates cake is a very tasty delicious sweet dish prepared without adding ant sweeteners like sugar or jaggery. It is naturally very sweet & rich in carbohydrates. The best Swedish to be consumed in winter & provide warmth to the body. Dates are also rich in iron to provide & strength to the body.
a.) Khajur (Seedless soft Dates) 500 gms
b.) Ghee (Preferably cow ghee) 3-4 tbsp
c.) Black Pepper 1-2 tsp (optional)
d.) Salt 1/2 tsp (optional)
e.) Dry fruits (Almond, Cashew) 2 tbsp finely chopped
Preparation time 30 minutes
a.) Take a wide Pan & heat ghee in slow flame for 2 min
b.) Add Khajur & stir well in ghee till it becomes moist & soft. Approximately 10 min, in medium flame
c.) Add black pepper & salt, again stir till everything mixes well. These ingredients are optional & are just added to reduce over the sweetness of dates. Quantity can vary as per taste.
d.) Take a flat empty plate, possibly steel plate, and apply ghee all over the plate with your fingers.
e.) Switch off the gas & empty the mixture into the plate & spread it well all over the plate.
f.) Garnish with finely chopped dry fruits.
g.) Keep the dish under room temperature for 10 minutes, after that it can be put into a refrigerator (not freezer) for 30 minutes.
h.) Now the dish is fully ready. Cut into small square pieces to serve.
