Smashed Brinjal Dry (Baingan ka Bharta)

1 Brinjal (Eggplant)

1 Scallion (small pieces)

1 Tomato (small pieces)

1 Green Chilli (small pieces)

4-5 Tiny Pieces of Ginger

Curry Leaves (Optional)

1 Tablespoon Red Chilli Powder

1 Tablespoon Turmeric Powder

1 Tablespoon Coriander Powder

½ Tablespoon Black Cumin Seeds

Edible Oil



Roast and mash brinjal before to make this dish. After that add scallion from top on roasted brinjal.


Cook oil on low flame. After its warm enough, add tomato, ginger, curry leaves and green chilli in oil.

After 1 minute add all the mashed brinjal and scallion in the oil. Now, add salt, turmeric powder, coriander powder, red chilli powder. Now add few drops of water from top and by the help of the spoon, mix all the items in oil properly.

Now, cover the pot for 5 minutes by lid. Remove lid and serve with what suits your taste
